These beautiful, delicious enchiladas were prepared at the El Camino Real restaurant on Truxtun Extension. They make nopales and eggs for breakfast as well. Deeeelicious.

Five Minute Cake in a Cup

My friend Kristin and I have what we call "Fat Kid Pride". We love anything marshmallowy, chocolaty, salty (as in potato chips) and sugary (as in Peeps). This recipe is the hot thing from the Internet because it allows immediate access to CAKE.

Microwave cake in a Cup
4 tbsp flour
4 tbsp sugar
2 tbsp cocoa
1 egg
3 tbsp milk
3 tbsp oil
3 tbsp chocolate chips (optional)
A small splash of vanilla
1 coffee mug

1. Add flour, sugar and cocoa to mug, mix well.
2. Add egg and mix some more.
3. Pour in milk and oil and mix well.
4. Add chocolate chips and vanilla. Mix again.
5. Put mug into the microwave and cook for 3 minutes at high power (1000 watts). The cake will rise over the top of the mug, but don't be alarmed!
6. Allow to cool, and tip out onto a plate if desired.
7. Enjoy!
